Four species of rock lobster are found in Australian coastal waters:
(1) Southern (Jasus edwardsii), (2) Eastern (Sagmariasus verreauxi),
(3) Tropical (Panulirus ornatus), and (4) Western (Panulirus cygnus).

Jasus edwardsii, also known as “Southern rock lobster“, “red rock lobster”, “red dragon fish“, and colloquially as “crayfish”, is found in southern Australian and NZ coastal waters. Southern rock lobster is regarded as the premier lobster worldwide because of exceptional flavour, texture, flesh-to-shell ratio, colour, provenance, and because it looks like a dragon. It is redder and cooks redder than other lobsters, and red is considered lucky in many cultures.
